Gluten-Free Irish Soda Bread

Just because you’re gluten free, doesn’t mean you can’t enjoy delicious Irish Soda Bread to celebrate the season!

1 cup cornmeal

1 cup gluten free flour

1 tsp xantham gum

1 cup milk

3 tbsp olive oil

1 tbsp honey

1 tsp baking soda

1/2 tsp baking powder

1 pinch salt

  1. Grease and flour an 8” cake tin
  2. Preheat oven to  375 degrees
  3. In a large bowl, mix all ingredients with an electric mixer until blended.
  4. Pour into baking tin and bake for 45 minutes
  5. Serve with irish butter
